Protein and Potassium-Packed Cucumber Salad


Summer just officially started, and as the weather heats up, it's nice to have a simple and cooling recipe to turn to in order to cool down after our work. The large amounts of protein and potassium in this salad lends itself well to recovery days and post workout to replenish those electrolytes lost in sweat. I like to make it a few hours ahead of time to let the flavors mingle in the fridge. 

Recipe serves 3

You will need:

1 cup Cucumber

1 cup Black Beans

12 oz. Cooked Chicken Breast

1 whole Avocado

1/4 cup Sour Cream

Sea Salt and Pepper to taste

Open the avocado and discard the pit, place in a bowl with the sour cream and mix thoroughly with the salt and pepper. This would be a great time to add some extra spices. Turmeric is a great anti-inflammatory that gets even stronger when combined with black pepper. I'm also fond of onion salt and smoked paprika.

Simply chop up the chicken and cucumber to your preferred texture add the beans and mix them in the bowl of avocado and sour cream.
